Renowned chef BJ Dennis will join Lucky Rooster Kitchen + Bar for a lowcountry dinner featuring Gullah Geechee cuisine on Feb. 2. Part of the Hilton Head Island Gullah Celebration, the dinner supports the Native Island Business and Community Affairs Association (NIBCAA). Dishes on the evening’s special menu include oyster croquettes, deviled blue crab dip, chicken fried quail, stuffed flounder, curried goat, chicken thigh with giblet dirty rice, pork blade steak with grits and sweet potato pone.
Lucky Rooster chef/owner Clayton Rollison, a Hilton Head native, is excited to welcome BJ Dennis back to his restaurant.
“I love cooking with BJ,” he said. “He brings a passion for the heritage and history of Gullah Geechee cuisine to all his food.”
Dennis pays homage to Gullah Geechee culture, brought to the Americas by West Africans and later disseminated to the West Indies and the American South. He studied the techniques of his ancestors during four years of study in St. Thomas, but also has a foundation from his grandparents that emphasized eating form the land and creating fresh, seasonal and local dishes. He has worked in several award-winning southern dining establishments including Carolinas, Anson’s, Oak Steakhouse, Hank’s Seafood, and 82 Queen.
The Gullah Celebration dinner will be held at Lucky Rooster Kitchen + Bar, 841 William Hilton Pkwy., during the restaurant’s regular hours of 5-10 p.m. Reservations are recommended. Menu items will be priced a la carte.
