Dedicated to serving customers fresh, local fish, Hudson’s works with fisherman in Charleston, Georgia and northern Florida to get fresh catch such as swordfish, mahi mahi, grouper, tile fish, trigger fish, vermilion snapper, and black sea bass. Fresh catch is added to the daily lunch and dinner specials.
Hudson’s employs the largest remaining fishing fleet on the Island, which brings fresh local seafood straight from their docks to your table. Share the excitement as their crews unload thousands of oysters, shrimp and soft shell crabs from the day’s catch. Bring your family and friends for a special Lowcountry treat that has been a tradition for Islanders and visitors for many years.
Every spring, there’s a soft shell crab shedding operation at the restaurant. Shedding boxes are constructed in the packing house with a water circulating system to facilitate and manage the molting process. Once the crabs back out of their shells, they are immediately removed from the water to prevent any hardening of the shell so that almost the entire crab can be eaten rather than having to shell the crab to reach the meat. This year, Hudson’s plans to shed and serve 10,000 crabs.
Andrew Carmines, Hudson’s General Manager, started Shell Ring Oyster Company in 2013. It’s an oyster farm that provides the finest, local single select oysters and another way for Hudson’s to give customers the absolute freshest product available. Equally important to Carmines is environmental impact. He believes if you are making a living from what the ocean provides, you should be responsible about the resources you are depleting. “Shell Ring will allow us to avoid purchasing large amounts of the natural resource and will clean the water in the process,” Carmines said.Click here to learn more

“Hudson’s has been a family affair since the venerable J.B. Hudson, Sr. put his name on the door of the old Hudson’s Oyster Factory back in the 1920’s when it was a seafood processing plant. For more than 46 years, Hudson’s has been a tradition for Islanders and visitors as Hilton Head’s most renowned seafood eatery. Almost all of our seafood comes from these waters.
